do some christians dismiss evolution and carbon dating because...?
a) They have thoroughly researched the subject and have come to the conclusion that it is an invalid theory.
b) It does not fit in with what the Bible says, and the bible is ALWAYS correct.

Yeah, I'm afraid the answer is actually "B". The standard retort I hear on carbon dating is that you can test a log that was burned in a fire, and carbon dating will tell you the log is hundreds of years old, so it's completely unreliable.
Of course, there are obvious physical signs the log has been burned, so no serious biologist, geologist, or chemist would rely on carbon dating and leave it at that. And yes, there is the fact what they're terming as "carbon dating" is being used as a catch-all term to refer to radiological dating, much of which relies on chemicals other than carbon and which isn't subject to the same pitfalls carbon dating is.
However, the very coincidental line between what the scientific method accomplishes almost flawlessly and what it's completely incompetent at always seems to follow Biblical lines for these folks.
Electricity, running and purified water, modern construction materials, modern synthetics used in making things like coats, automobiles, telecommunications, computers, modern appliances, food preservation, most of the food itself, oil refinement, alternative fuel research, medicine... they'll take every bit of that the scientific method leads humans to discover and add to their knowledge base.
They'll even take Evolution and Geology if they don't know that's what it is. Virtually none of the food we eat today occurs in nature. It's all been selectively bred by guiding the principles of Evolution in order to provide us more desirable food sources. Geology is used all the time to determine what land is fit for building things on, whether or not there's oil, natural gas, or significant mineral deposits in it, etc, etc, etc.
The instant Evolution and Geology point to the fact the world wasn't created six thousand years ago and manufactured as is with all the animals looking like they do now and only two human beings starting the whole shebang off?
Oh no. The instant that happens its all lies and parlor tricks that don't have a shred of evidence behind them. Couldn't possibly be true. You can disprove it in five minutes flat... but they really have to be somewhere in four minutes.
Either that or you get retards like Kent Hovind, whose scientific knowledge seems to be keeping the rest of the contents of his colon company, who throw a long string of jargon together and rely on the fact the audience they're preaching to is uneducated enough not to realize what they're saying is sheer nonsense.
To be honest, I understand perfectly well why they do it. For many of the leaders coming up with these things, it's a power play. They make money, gain influence, and get praise and respect for keeping people convinced they're right, so they'll do it even if they know they're wrong.
For the rest, if you admit the Bible has the creation of the world wrong-- that it didn't take place in six days, that Adam & Eve weren't created, that life didn't appear as is, that there was no worldwide flood, etc-- you have to admit the Bible is not the infallible word of God.
The instant that happens, the authority on which it rests flies out the window. If it gets that much wrong about the basics of the world, what's to really say it got anything else right?
What if you've been walking around passing judgment on everyone else in error and God's going to hold it against you? Not good. What if it doesn't have the afterlife right so you don't really know what's coming? Could be trouble. What if-- what if we really are just another type of animal? Does that mean we have no soul at all?
That's downright frightening if you think having a soul is what makes you special and is your ticket out of ending up being just another pile of rotting meat.
The extremely religious tend not to be very subtle (in fact, most people aren't, regardless). They don't like doubt, and will do anything to cling to a worldview which makes them feel safe. It's comforting being able to shut out doubt and the dark. It's comforting to think someone else has taken care of all the things you can't figure out. It's comforting to think you'll be loved and live forever and ever, and have a simple answer to why you're here and what your purpose in life is.
There's a lot of reason, psychologically speaking, to do anything you can to hold onto a worldview like that rather than let it be cast aside and leave you without the answers and security it provides, so a lot of people work to justify it no matter how ludicrous the explanations they come up with are, and a lot more try to ignore anything that puts a crack in their feelings of safety and security.
Unfortunately, they're stuck in a Universe which neither asked for nor cares about what they want to be true, and they're stuck in a species where not everyone needs the security blanket they do... both of which are threats to what they want.
Hence the conflict.
